Update on Brooklyn Pizzeria

My wife and I stopped in there for lunch today. As I was getting ready to sit down, I saw Todd, the owner. I said hello and he sat down with us to talk.
The rumors of him dying or selling out to his employees were untrue. He now lives in California though, as his wife is being treated for an illness at Stanford. He comes in periodically to check on things and keep the restaurant running smoothly. (He said he has had major problems with employees lately.) He also has a food truck in California by the same name that he sells pizza out of.
We talked for about an hour, mostly about pizza making. He said he has to adjust his dough recipe based on season, humidity, age of the yeast, rainfall and a hundred other things. He sources his ingredients mostly out of New York and New Jersey.
Told him I was glad he still has his hand in the business here and hoped he and his wife the best.

My favorite casual take out joint. I get the one with olive oil instead of red sauce.

He needs to spend a lot more time at the restaurant. It used to be great, but has been terrible for a while owed to employees who obviously don’t give a shite about the product or the service. The place is always disgustingly dirty.
He needs to find a better manager to watch the place if he isn’t going to be around.
