Magnalite has never failed me but I'm currently in the market for a larger, taller, and narrower stainless pot to experiment with.

I got a 16 Qt All-Clad with a heavy copper bottom that holds the heat really well. You can cook on low temps and the heat is evenly distributed. Great for gumbo.
