Yeah one of the experts will chime in shortly but my oldest at 5 can ride like 90% of stuff. Most of the biggest stuff is around 42 I think with very few rides that are 48 maybe? Disney is not universal made for teenagers and young adults, it’s geared for kids.
For you personally it sounds like the cruise is better. I’ve never been on the cruises and I understand they are awesome, but to me there’s nothing that’s gonna beat that first day walking into Magic Kingdom or any one of the 100 other things your kids will look forward to.
People hate on Disney, but it’s a blast for kids that age.

Everest in AK is 48 and that's the tallest height requirement. When we went my 3 year old way 38-40" and she could ride everything she wanted to ride including the 7DMT. and Splash Mountain.
There is so much for kids to do that doesn't involve the bigger coaster rides. My daughter got a bigger kick out of the princess meet and greets.
