Several reasons.
1)White is by far the most common color of paint: trim and primer are usually a shade of white and houses used to be painted white more often than not. Also back in the day when painters were actually mixing paint, white was the base being used. A white uniform will still look "clean" at the end of the day if you get white paint on it.

2)White will show if you get paint on you more than other colors (besides black but no one wants to wear black when painting outside).A lot of the same reasons most chefs and doctors wear white as well. White was the official uniform of the painters union but they were already wearing white before then.
