My gut feel is if you’re doing keto or low carb for non-diabetic reasons the occasional cheat meal isn’t going to hurt your long term goals.
The key is then to have the willpower to keep your overall dietary balance in tact. The human body is more than well enough to handle one “non-optimal” decision, it’s the 78 bad decisions in a row that lead to a bad time.

Eat a bowl of gumbo - heck make a pot. Just don't make it a habbit as mentioned above.
In the past, I've made my own chicken stock, cooked down all day satuday, sunday I put the rest of the veggies/chicken/sausage whatever in and cook down some more. It isn't gumbo, but it works.
