I've found pork will sometimes have a bit of an off odor to it, especially when buying 2 Boston Butts in the cryovac packaging.
I've never had any issues with using them. I'll simply just rinse it off in cold water and use paper towels to dry it off. A lot of times it's just the juices from the meat that can give it an off smell.
ETA: I don't usually keep pork in the fridge for a week before opening it. I usually take it right out when I get home to repackage it to freeze or to put to use.
