I ended up not doing my meatballs this weekend. Last night's whiskey during the second half pretty much torpedoed that idea.
I pulled some country ribs out of the freezer, deboned them, browned the meat off real good, then deglazed with some stock and threw the bones back in and built up a red sauce on top of it. Been simmering since about 2.
Keeping everyone out of my pot until the meat simmers just enough to fall apart to my liking is like fending off barbarians at the city gates.
