Every chicken/turkey/beef processing plant has an average of 40 usda inspectors. They look at every single animal going down the line.

Each inspector has the authority to shut the plant down with a push of a button- and they do so routinely until the issue is resolved.

They also tag every part that must be destoyed (like a broken chicken wing) which is then cut off. "dirty" parts are are tagged for processing offline, meaning a human does all the work instead of the assembly line (or desembly line, if you will).
