I'm kind of drawing a blank on "interactive" so I can't help you there.
Otherwise your list is very overly broad and I would want to narrow it down a bit.
Does area of town matter? Price point? Casual? Fine dining? Traditional restaurant?
Here are some thoughts:
High end fine dining:
Commander's Palace
August
Casual Fine Dining:
Coquette
Saba (or Shaya)
Wine (or Cocktails) and Small Plates:
Bacchanal (there will also be live music, great spot)
Delachaise
Bouligny Tavern
I think Bacchanal would be the most FUN of those places. Great outdoor area with great wine and good small plates. Its always packed, live 3 piece jazz bands, fun place. But will be hot as balls obviously.

Interactive meaning I wasn't sure if they had a place where you can learn how to make nola style cocktails or anything along those lines...then also pair it with great food.
Also, currently I think the lean with the majority of the group would be a Casual/Fine dining type spot...but would rather go to some of those places like Bacchanal, Longway Tavern, Coquette.....
These are all places I've never had a chance to check out before. Would love to experience some new stuff with awesome environments.
