Have you ever read the Foxfire series of books?
Teacher over in Georgia had his students go interview the old time mountain people in the late 60’s to early 70’s. He wanted a written record of how people used to do things from blacksmiths to killing hogs. Really interesting series of books. During the zombie apocalypse they will be required reading.

Do they have on tape. I destroyed my eyes with reading in bad light etc. occupational hazard unfortunately. ( I have one good one left, after about s dozen surgeries)

My Dad said that when they'd butcher a hog, they'd render the fat then pour it on the layers of meat in a barrel. When they wanted meat, they'd dig some out from under the lard and cook it. This is how they kept it without refrigeration.

To preserve it by smoke I guess you would cut it thin like jerky and then smoke it? How long would you smoke it to preserve it but still have it edible?
