I started taking my daughter very early. Just let her hit a ball or 2 every couple of holes if I wasn't holding the course up. At 9, I got her into lessons. Like you said, they are a sponge at that age. I don't push her but it seems like she is kinda hooked, but she also has other hobbies she does as well that competes for her time. I think at some point she is going to pick one and scrap the others, I just hope golf makes the cut because that could get her a scholarship for college.
