This can't be emphasized enough.
Not only do you not have to deal with checking/retrieving your luggage, it makes getting around Europe MUCH easier.
As has been mentioned in this thread, you won't need half of the items on your list.

I'm going to give it a shot. I have eliminated about half the things I had listed, but I still don't think I can fit it in my carry on only. Either way, I'm only bringing 1 bag and a daypack. I may end up just checking my medium size bag and not have a carry on.
