Was there for a short time back in September (stupid hot then), but didn't have much time in Dubai. Go check out the Dubai mall and get outside for one of the fountain show times, while looking up at the Burj Khalifa. This was pretty cool. We also drove out on the Palm Jumeirah. It was ok just see it, but too hot at the time to do much.
There's lots of good food, especially Indian, as most residents are immigrants.
Don't drink at your hotel and then go wandering around.
