Hot water will freeze faster than cold. Your problem is in the attic either before the tank or after.
Next time we have a hard freeze you can do two things.
1. turn the water heater breaker off after your evening showers and drip the hot water along with the cold over night to prevent freezing.
2. set the hot to a slow drip. This tho will cause your tank to constantly drain/fill/heat. But you will have hot water when needed
