It's not even just about entry level jobs, if oil does not come back anytime soon what does Lafayette or the state's economy look like in five years?

How would you possibly know this prior to hiring them? They tend to work for a fraction of others as well just to be able to get their foot in the door. Louisiana is just more common to run on the good ol' boy system and has nothing to do with merit.
