While there is some truth in this statement, you don't want to overheat a seafood gumbo for too long if not necessary, the seafood can become quite rubbery. Therefore handling the gumbo correctly throughout the process will lead to a better end product at serving.

No argument with that from me. I won't even eat leftover fish, but it's not because of a health hazard, it's because it's not as good.
