If you mean doing it above board, you do it like Florida State. Tell the head coach this is the way it's going to be. Find your next guy and hire him as a coordinator, and name him "coach in waiting".

In Les' case, it could be a new OC, or it could have been Aranda. You negotiate with Les from a position of power, assuring him he will be handled graciously and with respect, and make it clear you want a smooth transition of power in the next several years. Let Les know he will be taken care of. But that his extensions are done, and he's on the last contract. And the new guy will be involved with meetings with the AD and administration from here on out.

If Les chooses not to go with that, his only option would be to quit, and there's no buyout. If Les accepts his fate, he works for the kids, and apprentices the other guy in HC duties as time goes on. And Les moves "up", into some ceremonial post. Or even as the next AD... which I think should have been the move.
