Lightly dust with flour, seasoned with salt and pepper. Preheat oven to 400.

Melt a few T's of butter, with a T or 2 of olive oil, in a frying pan.

Sear the chops a minute or so per side, until a little golden. Use med/high heat. Remove to a baking pan and pop in oven.

Add a T or two of your seasoned flour to the frying pan. Med heat. Whisk until smooth. And a cup or so of chicken stock, whisk. Add lemon zest, a T or 2 of lemon juice, salt and pepper to taste, with a T or 2 of capers. A bit of parsley is good too. Remove from heat when it costs the back of a spoon.

When chops are medium, pull them and serve.
