Notarizing YOUR signature as certifying what's in the document. If the document is incomplete he/she cannot do that.

Look at the back of the title. There should be a place for 2 witnesses to sign and then a place where one of the witnesses appears before a notary and swears that they witnessed the signature. So, you could get two other witnesses there at the transfer and one of the witnesses could later sign before a notary.
