Good rule of thumb to start,
take big divots or play in softer soil = more bounce
are a picker and play tight fairwars = less bounce
Avg bounce is around 10/12 degrees on a 56* wedge

I play a good bit of bounce but I struggle bigly with short pitch shots around the green when the ground is soft
