I think the over use of cumin (and probsbly hundreds of other things) is why I just can't get on board with the smell, appearance, and taste.

Where do you live? I can't think of any dish that I've had that was heavy on cumin.
If anything, try Tandoori chicken. It's some of the best chicken I've ever had. Briyanni is also good, and very similar to jambalaya. Some would say it's even better.
frick. Now I'm craving a type of food I can't get in Arkansas (at least a good version).
