We aren't talking about Schrodinger's cat where the observation itself can affect the outcome. Not all science is on the quantum level. An atom with one p/n/e is hydrogen. 2 of those bonded with an atom we call oxygen is the H20 molecule. These are facts. Observed in the same way that I know I exist and you exist (although the electron is the outlier there).
Now, if you want to get into a discussion about the existence of reality and conciousness, then again, that's philosophical not physics or chemistry or biology.
