Okay, well, that changes things. Next time, I might tell her that I arranged last minute for vegan foods for you and you cancelled last minute. I'm not going out of my way. I'm sure I will have a veggie side or I can order a veggie pizza for you once you arrive.

I'd rather just not be invited then someone throw a hissy fit because they have to have extra veggies and salad for me. It's not a big deal at all.
If you put chicken broth in the lentil, you really really suck. I hope you experience something of the same equivalence some day. It may not be food, but it will be something important to you. Like really really suck...
fwiw I brought my own meals to every event I went to (family wise) for 4 years. Eventually, I stopped showing up because no one else had to prepare their own food to show up. Suddenly my family learned how simple it is to have vegan options. I didn't make a big deal about it either.
Oh the power of an open mind...
