We had relatives coming from out of town and had a meal planned for about 20 people or maybe a few more. Found out somewhat last minute that two were vegan. We were already having a variety of vegetables like roasted asparagus, roasted white and sweet potatoes and several salads. We added an eggplant dish that wasn't hard and was sort of like an entree to them. We put out guacamole for them and one of them ended up splurging on the deviled eggs. They both shared a dessert even though it wasn't vegan. We had some sort of vegan dessert, but I can't recall what it was.
It's pretty easy to roast a bunch of different vegetables and throw a salad together. Portabella mushrooms are like meat to vegans and can be roasted, grilled, sauteed etc...with little effort.

He was planning to grill steak.
I season the portabelas the same way and grill them beside the steak. Drizzle with a little balsamic and my wife loves it.
