My reaction to things like this is directly related to how I feel about them. It's usually somewhere between "F that, tell them to bring their own good," and, "absolutely, no problem. Let me look up a fun and interesting recipe that works and see if I can pull it off."

Serving a vegan isn't that big of a deal. Vegetables. How hard is that?
Green beans.
Green beans with butter, salt and pepper. Old southern.
Green beans with butter, pepper, soy sauce and sesame seeds. Asian.
Make a nice salad. Steam some asparagus. Make the whole roasted cauliflower from Dominica which I do a lot.
