Had the cauliflower boudin at T-Boys which I consider the best boudin anywhere. The cauliflower boudin is what it is, a low carb substitute for people who don't want to eat the rice & are willing to sacrifice the true taste/texture of boudin. It's not bad but it's not the same. I found it a little mushy, too meaty, & after a while, there is a subtitle cauliflower taste. For those who are die hard low carbers, it's a great alternative. Personally, I say live a little & enjoy the real thing when you crave boudin & cut your carbs elsewhere. Cauliflower or not, boudin will never be "healthy" so you may as will dive in with the whole sin & repent later.
