I'd take it down to St Joe bay to fish for specs, reds, and flounder. You may be able to get some Spanish macks out of Mexico beach too.

I'd talk to Tom Putnam at Half Hitch or Brad Stephens at SunJammers in Panama City or Nate Odum at Mexico Beach Marina any of them will steer you in the right direction.

This...plus you might take it down to Indian Pass or Apalachicola Bay.

Also, don't shy away from the freshwater fishing in that area. You could head up to Dead Lakes (~15 miles north of Mexico Beach) and wear out some monster gills.
