Because traditional big men aren't good at basketball.
People are still big. I assure you, there are some big people out there. But the game now requires skill. People can dribble and shoot 3s now. Which means you have to defend..and can't just be some big arse ogre.
This is a good time to say that I think Patrick Ewing is the most overrated player of all time.

The Dream, Kareem, Barkley*, and Shaq all had skill sets that would be dominating today. Kareen would still get the skyhook. Hakeem, Barkley, and Shaq would be unstoppable in today PNR's

Also back then bigs never faced double teams and had a lot of one on one clear outs on the block. Look at how many times Lebron, Durant, and Love got doubled team when posting up. We are talking about almost two different sports with how different the game is played. NBA rules today favor guards and yesterday's NBA favor bigs.
