My wife and I did a similar trip for our honeymoon. Started off in Oktoberfest, went to Salzburg, spent time in the alps, went to Lake Garda which is by Lake Como, then to Venice, then returned a different route to Munich and did Neuschwanstein.
If you can, I would not do Oktoberfest during the weekend. Insanely busy. If anything go as soon as it opens and leave at like 3-4 and go elsewhere in the city. Easy to do.
The alps are breathtaking. Tons of stuff to do. I'd highly recommend some extreme sports like rafting or my favorite was Canyoning definitely check it out. I'd highly recommend more time in the Alps then you'd think as it's very relaxing and plenty to do.
Salzburg is a cool city but don't need much time there. We did the Sound of Music bike tour, bike tours are great way to see the cities over there.
Check out the Ice Cave outside of Salzburg, one of the coolest things ive ever done. That and Canyoning.
