Most people will not go to the trouble but this is the best recipe I have found for French fries. If you put these side by side with the ones you make now these win every time.

Tried that method a few years ago - best fries I ever made. Made several batches and froze them. Haven't done it since then since it takes a while, but it makes great fries.
