I went from eating like you described to eating about 30 carbs a day. After about 10 days I was fine. I just took the attitude that it was a challenge type deal. I knew it would suck at first, but I would get over it quickly. Now I never crave carbs and the few times I've eaten into the hundreds I've felt bad afterwards.

Usually it takes me 2-3 days and I'm fine. I have been eating 20 carbs or so for a month. Zero trouble. Not so much headaches as it is my joints hurt for a few day, especially my jaw.
