Shrimp are tough, I spilled some shrimp water in a freezer and it stunk for 2 yrs.

My wife spilled gasoline in the back of her Tahoe, I removed the carpet, cleaned it and kept it outside for a few weeks until the smell wore off.

Then you have to get rid of the coffee smell, but that's a hell of a lot better than shrimp

Agreed. It's getting better. I coated the carpet with baking soda and that has helped the drying out. I put cat litter in a container along with white vinegar.
It's getting better
