Would a refurb Nikon D7200 for $620 (body only) be too good of a deal to pass up?

Don't do it. The reason the 7000 series is above the 5000 series is because of extra buttons and water resistance ( not proof). I'd get a 5300 over the 7200.
That is if course you actually don't need the water resistance. I personally don't.
