Just got back from Europe (Paris, Florence, Barcelona) and some of the best meals we had were in Florence. Trattoria Sostanza is a great spot. I called the first morning we got there and was able to get/share a table for 9:30 that night. The butter chicken is a must order for sure.
Vini e Vecchi Sapori is also fantastic. Small place so you'll need a reservation.
The food market (Mercato Centrale) is also worth checking out if it's not already on your list. Worth spending some time either walking around downstairs or eating lunch upstairs.
