I think it depends upon what type of mind you have.
If you have a mind for numbers, engineering is probably the easiest.
If you have a more analytical mind, law is probably the easiest.
If you can memorize lots of information with the ability to regurgitate back, medical school is probably the easiest - although the residency might kick your arse.
I know a girl who graduated at the top of her med school class who had to switch undergraduate majors because she could get through Math 1550 at LSU. And, she claims she studied her arse off for it several different semesters.
