Hemphead has made a couple compelling posts about this.

If one can sit and pass the bar any can't they practice law, even if it's on a conditional basis first (with a mentor or something)?

Although, maybe it's irrational, I wouldn't be able to use a physician who didn't have the credentials and reputation.

Even if we accept that those fields need it, but something like florists? Come on. There is no compelling argument to have a licensing board.

The thing is, we would still have licensing boards and "licenses" they would privately operated certifications, competing with other non licensed people and other licensing boards.

I think we are talking about a state licensing for things that are not professional in nature.

Most physicians are licensed through professional organizations like FACS, etc. There was a time for a licensing board but with the advent of the internet and the ease that it takes to check on accreditation. It's a gratuitous luxury for the state to have
