2 cup in 35 quarts of water will not be too much. Add 1 box of salt, seasonings, and heat the water. Taste. Add the other box if you like...I always use 2 boxes for the first sack.
Chackbay has very little salt compared to most products. It has the Chinese red pepper, which is a flavor I really like.

I agree Otis that Chinese red pepper is better than cayenne. I can't find that stuff in the store anymore. Probably didn't sell good outside of LA cause it's so hot.
