The Medicine Bow drive is pretty nice - take hwy 130 west out of Laramie. At the summit there is nice hiking at the Mirror Lake parking lot. It's not as spectacular as the Tetons but it very uncrowded and laid back which I really appreciated after Yellowstone. I have every intention of camping here for a few days when I get a chance. You can keep going west, and then after you are through the range head north to connect back to the interstate. After that there isn't much of interest until you get near the Tetons which is a pretty good drive.
There was an awesome Thai restaurant in Laramie - that was completely unexpected. Highly rated on Yelp is all I remember.

This. I went camping in Medicine Bow with some friends 5-10 years ago and it was a bit eerie how isolated you are in some places there. Nonetheless, it was awesome. Also, Tigris isn't joking about the Thai restaurant there it is great, and according to one of my coworkers there is a second one now .
If you aren't stuck on flying into Denver, you may want to consider flying into Salt Lake City or even Bozeman. SLC is a shorter drive and you get to go through Idaho, which in my opinion is one of the more beautiful states in the US.
Regardless, it sounds like you are in for a great trip!
