I think as Southwest expands their network, they are going to put more flights coming into NOLA, but of course, their model isn't hub so it still doesn't add to the number of connections through MSY.
I was in Concourse B recently for a 6 pm flight out and I was surprised at the number of people having dinner there. I think people truly are starting to get to the airport earlier in order to get through security, and thus find themselves with time to eat.
However, the service levels absolutely have to improve. The menus and the names sound nice, but unless they get the same quality food and most importantly employees, it's going to be a problem. If it's Delaware North running all the locations and doing all the hiring, it's going to be terrible.

They are only doing half, the other half is another group.
And supposedly part of the bidding is that the various vendors will essentially be running it the same way as they would a normal location, with the same level of quality and food. Doubt that will be the case but thats the pitch and apparently was a very large part of the bidding process.
I think the goal with all of this is to make the airport more attractive to get more layover type flights and to attract more international flights.
Also, most people try to get to the airport with as little time left as possible and not eat or drink there because the options are so terrible.
I know I would get there earlier and eat there if the options are this good.
