They do a bit when a new restaurant opens I'm sure for a few days, but other than that not really.

More management and promotion.

Emeril does go quite a bit.
Since he doesn't have as many commitments with TV and stuff, he is more involved in his restaurants and is opening a new one in South Walton, Florida.
