Every place in NoLa is having serious staffing issues lately. Over saturation of places making it difficult to get quality people.

First of all, my intent wasn't to bash B's. It was to share my experience. My observations come from an experienced eye as I have many years of experience in the business. I find it interesting that some of you think it is mandatory to dine for a long time or that it is no big deal to grab the bottle of wine for yourself. Both of these things seem trivial but should have been part of the service experience. In fact, these things should be the small things that should happen naturally without thinking in an establishment like that. Not offering the dessert menu is another thing that just shouldn't happen at B's. This is part of their DNA.
Interesting about the observation in the service industry. I thought that myself. How many new places have popped up over the past few years and that has to take a toll on quality staff. I also think that the expectation of getting 20% gratuity no matter what the level of service is causing the profession to become watered down. I hope they the art of fine table service will be present for my next visit. One bad trip won't keep me away.
