What about seasonings? Anyone ever do their own jap/cheddar or steens sausage?

I use Rebel Smoked Sausage seasoning and country sausage seasoning for breakfast party sausage . One pack of the SS will make 100 lbs. They sell all the seasonings and other things you may need to make sausage . I do 2-3 deer a year.

We use Deep South each package makes 25lbs. If we want green onion we add 2 bundles of green onions per 25lbs. It we make jalapeño we put 1 16oz jar of sliced jalapeño per 25lbs.
