Those stadiums are nice and have a lot of character, but I meant an NFL sized stadium, something you could play football or big soccer matches in too.
These are the last 5 IAAF Track and Field World Championships venues:
Osaka
Berlin
Deagu
Moscow
Beijing

Answer is simply that in order to accommodate the track you have to set the seats back 100 feet or so from the playing field that could be used for football, soccer, etc. No football team is going to play in such stadium as it would make it harder to sell tickets.

Well just about every one of those you posted has the field painted for soccer so...thats probably why

You do realize that there are more 30+ "NFL sized" stadiums where, you know NFL games are played. Many of those have hosted soccer events and several could be fitted for a track I'm sure.
