I'm sure you could find something decent in Lufkin, since you're driving right through it. Aside from Austin, there aren't a whole lot of powerhouse food cities on that path to say the least.
Yeah, I realize there isn't much along the way. Was just hoping somebody might have a hole in the wall type place they could suggest.
All else fails I might just eat at Buc-ees.

Lufkin is part of my territory for work and i have done my fair share of lunches there.
La Unica Tortilleria- Awesome dive mexican joint. famous for tamales and sell them to go.
Mom's Diner- good ole home cooking plate lunch specials. Chicken fried steak, chicken and dumplings, meatloaf, etc. good veggies and cornbread.
Rays Drive in and Diner- Just like it sounds, old school throwback diner with greasy burgers, massive onion rings, and soda floats.
that should be a good start. Lufkin is pretty big and has a ton of chains and even a Ralph and Kakoos, but the 3 above are all dives and great eats.

I think Bucc-ees needs to add picnic tables or something. We stopped in the one in Baytown, loaded down with food and just took it to the hotel in Houston to eat since they had no place to eat the food.
