Looking for a roadtrip in mid-late August that isn't terribly hot

So I was planning a trip to Glacier/Banff/Jasper, but I don't think I'll have enough time to do all 3 for multiple days, so I'm considering doing something else. I think I'll save Banff and Jasper for another time, so glacier is still on the table. Trying to do some hiking, biking, grilling, beer drinking, camping, SUPing and wherever else available for 7-9 days.
Considering northern Utah and Jackson Hole, then round up to glacier for a couple days and head home. I'm pretty open to suggestions.
Just me and my dog. I'm good for driving 18 hours in a day. I've done 22+ but I don't really care to do any more than 18 These days.

the Olympic Peninsula is amazing and August is the perfect time to go
you have everything that you want up there, mountains, beach, coast, lakes, beer, islands, no need to really go anywhere else
it would just be an extra days drive

The Olympic National Forest would be good for you. Camping and hiking. All trails in the Olympic National Forest are dog-friend my.
You can do Bend, Crater Lake, Painted Hills, Cascades, and the Wallowa mountains, as well.

High temp today at Hurricane Ridge is 73 degrees. Historical highs are in the low 70's and historical lows are in the low 50's for July/August. Hurricane Ridge is about 5200 feet in elevation, so your hiking may be a little higher or lower than that.
If you catch any trout in any of the mountain lakes up that high, you should be able to find a snowbank in the shade to keep 'em cold until breakfast.
At that elevation, you will be comfortable. Even the low 50's won't seem that cold when you get up in the morning.
