This is how I felt before wrapping. They were good but never how I wanted them. When I used to do them in the oven (steamed) they would fall off the bone...so I decided to wrap and I wont look back now.

Fall off the bone is technically overcooked. You want ribs where you take a bite with little to no resistance with the meat staying on the bone. That is a perfectly cooked rib.

Now, I would much rather over my ribs overcooked (fall of the bone) than undercooked (tough and chewy). So if you were to error on the side of caution overcooked is the way to go I guess.
