I always let them know and the usual response from them is "you don't touch yours and I won't touch mine"

Similar here. Been pulled over a few times while carrying a gun. When driving it is always in a holster attached to my console right next to the -- can't think of a better term for it -- gear shifter. Keep the hands at 10-2 and tell them - I am have a concealed handgun license. The gun is right next to the gear shifter. Sometimes they ask me to exit the vehicle. Other times its just - keep your hands where I can see them and we are good.

Last time I got pulled over I was driving a rental truck back from Florida. Had one in the center console and a small 380 in my pocket. Officer asks me to step out of the truck so we can talk. As soon as I get out I have my hands away from my body and say I have a CCW and it is in my right pocket. Officer said keep your hands out of your pockets and we are good.

It's all about how you present yourself - are you aggressive or not.
