If you want something different buy a pork butt, brisket, chuck roast, short ribs or pork picnic shoulder. Go to Wal-Mart and buy a $30 crock pot, put meat in, water halfway up, couple of cans of hatch green chilies, seasoning and a few of the above posted chilies in adobo along with a spoonful of beef Better than Bouillion. Cook until tender, most of the day.
Remove meat and let cool enough to shred and remove any fat. Skim fat from sauce, adjust seasonings and put in blender until smooth. Then make your tacos and put the leftover sauce in a $.50 squeeze bottle in fridge and will last a couple of months.
The pork butts make great tacos and are cheap but the shoulder cut picnic ham is cheaper. They all shred easily and will make a lot. You can freeze enough meat for a meal in small ziplock and microwave them.
Cook a pot of pinto beans or black eye peas then put in blender or buy a stick blender for $20 and do in pot until smooth. Then you have bean and brisket tacos. Or cook a pot of rice with lime and cilantro to add as well.
That will get you meals for a week and an alternative to ground meat.
