Butcher Shop in Baton Rouge/Denham/Gonzales?

I know there are specialty meat places on every corner, but is there an actual butcher shop here in town? I want to buy some custom cuts, but I want to season them myself. I know there is Roucher's in Plaquemine, but I'd rather not cross the river if I don't have to.
Also, does the butcher at Costco do custom cuts? Say, if I buy a couple Boston butts, will they cut them into pork steaks for me?
