Whatever he/she will eat.
My 2 year old loves broccoli, rice and gravy, taters and beans so we cook that a lot because most of the other stuff she likes isn't "healthy". I'm of the mindset that as long as she is eating and what she's eating isn't 100% crap then I'm good with it.

I have a little Coonass baby (17 mos). I make her eggs and boudin every Saturday. She demolishes gumbo and jambalaya. She also kills any seafood that we cook. It's been great.
Daily though, she eats some of what we eat at dinner time or we will make some simple stuff for her (grilled cheese or meat sauce and noodles). She also will eat the hell out of some Veggie Straws, mac and cheese, and Babybel's for snacks.
Breakfast is usually eggs cooked pretty much however, raisin toast, seasoned avocados, cheerios, oatmeal, or grits. She also loves bananas, strawberries, and yogurt.
Only crappy thing is that she gets a weird rash on her cheeks when she's had peanuts or sesame anything. The wife is a baby doctor so we have removed these products from the house. I could go for a PB&J right now!!
